We’ve been eating out/ordering in a lot the last week and a half because we were both on vacation, had a house guest for a few of those days, my birthday happened, and it was just too hot to cook on a few of those days. So tonight’s dinner was nice and refreshing in addition to being totally delicious.
Rob rubbed some pork loin down with this really great pork rub I found at Aldi last week for like a buck fifty. It’s pretty similar to what he mixes up on his own only it has brown sugar and since we’re out of brown, he’s just been using white.
To accompany it, I made some garlic parmesan Hasselback potatoes and threw together a pretty excellent salad which consisted of: spinach, roasted mushrooms, roasted leek, roasted sweet bell pepper, pear slices, gorgonzola, goat milk gouda, and some crumbled bacon.
